The Simple LifeThe stove crackles, the coffee pot gurgles. The herd of deer have been fed, the wild barn cats as well. Quiet time in the cabin, nestled in a grove of majestic cedars and snow frosted hills……Its chilly this morning. I sigh with gratitude and contentment for our simple life without excessive needs. To sit and ponder, to let the day unfold, unscheduled. Breakfast and holiday fun, let it begin……

Lemon – blackberry strudel and a Christmas tree to decorate!!!!!!

Ingredients

  • Phyllo dough
  • Fresh or frozen blackberries
  • Cooked lemon pudding mix
  • Sugar
  • Unsalted butter
  • Confectionary sugar
  • Cornstarch
  • Water

The sky is the limit as far as fillings go, I use whatever needs to be utilized.

Make pudding ahead of time so it is set up and cooled,

For the filling put berries in sauce pan add ¼ cup water to about 1 cup berries, ½ cup sugar,

Stir over medium heat until starts to boil, remove from heat have ready in little bowl,

2Tbs cornstarch with approximately 2 T water blend until smooth (thick like cream)

Add this to berries put back on heat stirring constant bring to boil then let cool while getting pastry ready’+

Follow directions on phyllo dough box, make into traditional strudel shape put long line of pudding and top with berries fold and seal with 1 t of egg white on edges, using a serrated knife mark portions only on top of dough do not cut all the way through or the filling will leak out

Glaze with confectionary icing…….1/4 cup powdered sugar, 1 t egg white whisk smooth if too thin add more sugar or too thick add more whites let sit until pastry has baked and cooled glaze as desired       Bake strudel for 15-20 minutes at 375degree oven

Serve cooled with whip cream or ice-cream
